The Bichot family roots date back to 1350 in Burgundy. The domain as it is known today was created in 1831 by Bernard Bichot (Albert would arrive 2 generations later) and since then, they have accumulated considerable amounts of terroirs (vineyards) across most of Burgundy, including Domaine Long-Depaquit in Chablis, Domaine Adélie in Mercurey, Domaine Du Clos Frantin in Vougeot and finally the Domaine Du Pavillon in Pommard. They are amongst the most active and recognized Burgundy producers across the globe.

Fixin (pronounced « Fissin ») is a smaller, a more ‘off-the’radar’ village of the Cote de Nuits appellation, yet produces cracking reds. The vines lie between Dijon and Gevrey Chambertin and are orientated east-southeast on clay-and-limestone soil with a localized presence of white marly limestone. Aged in oak barrels (old and new) for 14 to 16 months; Delicate and discreet, the nose has subtle notes of woodland undergrowth. Fleshy and robust, this crisp and oaky wine has a harmonious balance. The finish is persistent with light spicy notes.

Conclusion: A beautiful aromatic red – pair it with duck for great match.
