With our satisfaction guarantee, we need to be sure that all wines we select for our list are good. If the thought, "Should it be on the list?" even crosses our minds, it will not be included Next, our Sommelier rates them according to their drinkability, body and approach. We will not select wines with only 1 or 2 stars. The ratings are defined as follows:
Light, friendly, uncomplicated wines, but with enough kick to be interesting.
Richer, more concentrated wines, without being too complex.
Deeper, stronger wines, with bigger tannins (for reds) or refined flavours (for whites).
: 5-Stars wines will have more flavour intensity and/or complexity. Some may be ready to drink now, but many can age for a few more years.

Details

The Salento is a sub-region of the Puglia region in the South-Eastern point of Italy known as the ‘heel of the Italian boot’. The region lies between two seas, a territory of distinctive shapes and myriad forms representing nature. Fanning out around the castle and cellar, Castello Monaci’s 150-hectare vineyard is planted mainly with indigenous varieties - Primitivo, Negroamaro or Malvasia Nera. With a history dating back to 1804, the estate is at the forefront of sophisticated innovation and technology. It has a barrique cellar carved out of the solid rock that provides natural temperature insulation.

Liante or “Wind of the Levant”, the icy wind of winter and the hot one of the summer which blows strongly over much of the Adriatic and particularly in Puglia. It is the name chosen for the Salice Salentino, obtained from Negroamaro and Malvasia nera di Lecce grapes, hand harvested and, because of their different times of ripening, separately vinified. After the fermentation, part of the wine matures in French barriques while the rest develops in steel. Deep ruby-red colour, it has an intense and complex bouquet with hints of wild cherry conserve, chocolate and vanilla. Powerful, warm and balanced flavour with an elegant aftertaste of ripe fruit and spices, with a pleasant balsamic finish and slightly bitter aftertaste of green almonds.
