The Protector Story : The Celts believed Hazel to have protective powers. If you wore a badge of Hazel you would be protected from evil spirits, sea captains would wear twigs of Hazel woven in their hats to protect themselves from the wickedness of the sea. Irish Mythical Legend Finn McCool used a shield made from Hazel to protect him. Cabernet Sauvignon’s high tannin content symbolises this protection by protecting the wine during the ageing process.
The Shiraz grapes used to make this wine have been sourced from select vineyards in McLaren Vale including those planted on the original Goss property. With dominant winter rainfall, warm, dry summers that are tempered by the proximity to the Gulf St. Vincent and low humidity, McLaren Vale has one of the most consistent climates in which to grow premium wine grapes, particularly Shiraz.
The fragrant cabernet sauvignon dominates with bright red fruits and plums. The palate is rich and generous with plush dark fruits. The red and black currants, Satsuma plums and raspberries are balanced by fine savoury tannins and cedary oak.
